We harvest the tender scapes as they emerge from the plant and begin that classic curl. The scapes are wild fermented with chives, cabbage and salt. The result is one of our most popular seasonal krauts featuring delicate garlic and chive aromas and a distinctive Spring zest.

INGREDIENTS

1/3 CUP Garlic Scape and Chive Sauerkraut

1/8 CUP Walnuts

1/8 CUP Fresh Grated Parmesan Cheese

1/4 CUP Greek Yogurt

1 TBSP Fresh Chopped Parsley

This recipe scales well for any celebration!
1/8 cup = 2 tbps
1/4 cup = 4 tbsp
1/3 cup = 5 tbps + 1 tsp

DIRECTIONS

Make in a processor or chop and mix by hand

  • Chop walnuts first

  • Add kraut and parmesan, pulse or chop and mix until you have a pesto-like consistency (if you would like a smoother, spreadable dip include some kraut brine)

  • Add yogurt, puree or fold in until smooth

  • Add chopped parsley, pulse or fold in

  • Transfer to a dish, refrigerate

Dip will keep well in fridge up to 3 days.
