Make Delicious Snacks and Meals with Lacto-Fermented Sauerkraut.

Sauerkraut Spread

Appetizing spread that uses lacto-fermented sauerkraut (Bare or Sublime varieties work best) to dress up corned beef and swiss cheese. This spread pairs well with sourdough, pumpernickel, rye bread or crackers. It also takes mashed potatoes to a whole new level: just a tablespoon on top adds a tremendous amount of flavor.

Add the sauerkraut to the dish as a last step after cooking the base spread to preserve the live and active cultures.

INGREDIENTS

2/3 CUP Mayonnaise (or Plain Greek Yogurt)

1/2 LB Thinly sliced Deli Corned Beef, chopped

12 OZ Swiss Cheese, grated

8 OZ Kres sauerkraut, chopped

Spread on or dip with sourdough bread, pumpernickel/rye bread, pita chips or crackers

SERVING OPTION WE LOVE:

1 TBSP atop your favorite mashed potato recipe

DIRECTIONS

Add all ingredients, except the sauerkraut to a bowl and mix. Put in a baking dish for 20-25 minutes on 375°. Remove the dish from oven, let cool. Fold in the chopped uncooked sauerkraut.
