INGREDIENTS
Minced Garlic Cloves
Cubed Butternut Squash for a vegetarian option OR
Cubed Chicken (breast or thigh meat)
Diced Onion
Chopped Peppers
1 Can Coconut Milk (“Lite” version has added water)
Turmeric Powder (fresh is an option when in season)
Ginger Powder (fresh is an option when in season)

ADDITIONAL INGREDIENTS WE LOVE:
Rice
Fresh Parsley
Avocado
Lime Juice
Broccoli, Carrot, Snow Peas, Tomato, Cauliflower
DIRECTIONS
Lightly pan sauté minced garlic and diced onion, add cubed chicken or butternut squash and cook until done. Add turmeric, ginger and coconut milk. Simmer for a while adding in other veggies like peppers so they soften to your preferred texture.
Remove the pan from stovetop, stir in lime juice. Serve over rice or ramen. Top with 2 tablespoons of Spiced Turmeric sauerkraut per serving, finish with fresh parsley and avocado.
Pro Tip: Wait to add the sauerkraut to this dish as a last step, after cooking the base, to preserve the live and active cultures.
