Spinach Salad with Touch of Pink Sauerkraut and Maple Vinaigrette Dressing

A fresh spinach salad with Touch of Pink (young ginger & beet) sauerkraut, cucumbers, mint, feta, walnuts and maple vinaigrette dressing. This tasty vinaigrette dressing can be used with any Kres Kitchen Sauerkraut atop salad greens, spinach, grain bowl, vegetables, or even a sandwich/wrap.

INGREDIENTS

SALAD FIXINGS:

4 CUP Fresh Spinach (loosely packed)

1 MED Cucumber or Carrot sliced thin

1/8 CUP Mint, fresh finely chopped

2 OZ Feta

1/4 CUP Walnuts

2 TBSP Touch of Pink Sauerkraut

MAPLE VINAIGRETTE SALAD DRESSING:

2/3 CUP Apple Cider Vinegar

1/2 CUP Maple Syrup

3 TBSP Minced shallot or garlic

1/8 TSP Salt

1/8 TSP Pepper

DIRECTIONS

Wash fresh spinach and pat dry or use a salad spinner, remove any long stems and chop leaves

Slice cucumber thin, about 1/8” thick

Chop fresh mint

Chop walnuts halves

Toss well in a bowl

Crumble Feta on top of tossed salad

Add all salad dressing ingredients to a jar with lid and shake or whisk in a bowl. You can adjust the flavor by changing the proportions of the ingredients.

Top salad with dressing before serving

OPTIONAL INGREDIENTS WE LOVE:

  • Substitute tofu or goat cheese for feta
