Homemade swicy sauces have never been easier to prepare - simply mix 1/2 teaspoon of Kres Wildfire into 1/2 to 1 cup of local honey or maple syrup and… WOW! But that's not all, try blending into yogurt, hummus, mayo, cream cheese, sour cream, or even tahini paste, for a quick spread or dip. We love a wee smearing on foods (think cabbage wedges) after grilling to bring out a spicy-smoky flavor. Our pepper paste is fully preserved using traditional lacto-fermentation. Because we don’t acidify (like with vinegar) or pasteurize (with heat), our pepper paste is a living probiotic food with all the gut-health benefits to match. That said, don’t hesitate to cook with this seasoning - just be aware that higher temperatures (over 104-110°F) will injure and likely neutralize the good bacteria and enzymes. However, because the benefits of fermentation go beyond probiotics to include better nutrient bioavailability and digestibility, cooking with fermented foods is not a culinary offense. The fundamental attributes of lacto-fermentation will elevate the flavor and nutritional value of any dish, whether or not the probiotics are still active.
