Using classic fermentation techniques and seasonal whole ingredients, Kres Kitchen creates functional artisan foods for adding deliciousness to any meal. Our sauerkrauts are diverse and handmade to satisfy an eating plan focused on nutritional variety, culinary enjoyment and the ultimate in healthy food convenience.

  • High Quality Ingredients
    Diverse seasonal ingredients are regeneratively grown by Kres in a healthy ecosystem free of synthetic chemicals, pesticides and sprays. As grower/fermenters we’re able to harvest at peak and process almost immediately, minimizing nutrient loss and optimizing FLAVOR. Fresh ingredients that we don’t grow ourselves are sourced as locally as possible prioritizing ecologically-minded growers.

    Wild Fermentation
    Our ferments are powered by naturally occurring microbiology freely found on the surfaces of fruits and vegetables. We use a 3-phase fermentation technique (full-cycle microbial succession) to create the best flavors and most diverse nutritional profiles.

    Zesty Bold Flavors
    Unlike a sharp vinegar-like acidity (acetic acid) often associated with “pickled” vegetables, the acidity in our products is naturally driven by lactic acid which hits your palate differently - more depth, less bite. Lactic acid fermentation offers complex, multi-dimensional flavor mashups expressed by biological and chemical transformations and the specific ingredients used. To achieve the best culinary experience, our ferments are allowed to age naturally — ample time for flavors and aromas to fully unfold before packaging.

    Live Active Cultures
    Our products are cold-packed raw, meaning they’re not pasteurized or heat treated. Our products are not directly acidified (like with added vinegar or citric acid) which can alter the activity of beneficial microorganisms and enzymes. We use unrefined mineral salt for the highest mineral content and to nurture and protect the microbial community throughout the product's lifecycle.

    Handmade
    We believe lacto-fermentation is an artisanal craft. A time-tested preservation method that offers the best culinary experience and the highest nutritional benefit when produced with care in non-industrialized settings. 

    Sustainability
    Our products are classically fermented in solid vessels, never in plastic. We package in eco-friendly glass and recycle in-house.

  • Spending one-on-one time with many people at farmers markets across Northeast Ohio has taught us a lot about key themes and preferences. As advocates for eating a wide variety of fermented sauerkrauts, we understand that it can be overwhelming to choose - especially if you’re just getting started. Our carefully curated sets are based on ongoing market conversations and customer purchasing patterns. We’ve simplified the section process while creating a more enjoyable way of personalizing and completing your set with the “Your Choice” option. Regardless the krauts you choose, you can be certain that all varieties bring unique zesty flavors and distinct nutritional profiles to your snacks/meals keeping your eating plan healthy and refreshing.

  • We ship throughout Ohio with the goal of ensuring that our products arrive within a timeframe that safeguards quality. Our fermented products are preserved using traditional fermentation techniques. Although perishable, our fermented products do not require temperature control for safety by current FDA Food Code. As such, we do not pack with ice gel packs as a standard procedure.

    Our products ship out on Wednesdays. Orders received after 10am (EST) on Wednesday may not ship until the following Wednesday. We may temporarily suspend shipping during periods of extreme weather - including very high and very low temperatures forecasted during the shipping window.

    Your product will arrive in a custom shipping box designed to prevent damage in transit. Since our jars are not hermetically sealed, you may find a small amount of leakage from the lids because of handling during transport. This is not considered a defect and the product will not be negatively affected. In keeping with our sustainability goals, all packaging can be fully recycled. Please read our shipping policy for more information.

  • Our fermented products contain live active cultures and every batch is tested for safety prior to packaging. To maintain quality, please store refrigerated and always use a clean utensil to portion out the ferment. In so doing, our krauts should keep for many months.

    PRO TIPS:

    • To maintain full viability of the natural probiotics, vitamins and enzymes, add our ferments to your dish after cooking - like when eating with eggs. High temperatures can neutralize these important attributes. Also, think of sauerkraut as an ingredient for dishes that don’t require high temperatures, like salads.

    • If you’re new to fermented foods, start with small portions (1 to 2 teaspoons) and increase based on tolerance. A little sauerkraut goes a long way and consistency is important. Two tablespoons a day is better than a heaping serving every once in a while.

    • If you’re on a special diet supervised by a health care provider, always check with your provider before introducing fermented foods.
